Seared Salmon

salmon fillets, c. 6 oz. per serving, skinless
olive oil
salt & pepper

Brush fillets with oil, sprinkle with salt & pepper. Place in a hot nonstick skillet and sear on both sides. Lower heat and finish cooking through.

Alternately, grill in a fish basket or grill topper, following same procedure as above. Be careful not to let the salmon dry out.

Note: goes very well with the cucumber dill salad.
