A. Brown's Guacamole

1 Haas avocado, halved, seeded, peeled
dash Kosher salt
dash cumin
dash cayenne
2Tbs. onion, diced
1 Roma tomato, seeded & diced
1 Tbs. chopped cilantro
1 small clove garlic, minced
1 Tbs. lime juice

Put avocado halves in larger bowl. Mash coarsely with potato masher, adding salt, cumin, cayenne.

Fold in onion, tomato, cilantro, garlic and add lime juice. Let sit at room temperature for 1 hour.

Serve with fajitas.

 

Note: This recipe is the winner of several versions of guacamole and, though I made a couple of minor changes, I think Mr. Alton Brown would recognize this as his. Don't mash the avocado too much; chunks are desirable!
