Our Favorite Fajita Marinade

1/4 c. soy sauce (reduced salt)
2 cloves garlic, crushed
juice of 1 lime
1 tsp. ground ginger
2 Tbs. brown sugar

Combine all in a plastic bag. Good for 1 flank steak (1.5 lbs. or so). Marinate for 6 hours or overnight.

Grill the flank steak (or substitute sirloin or skirt) until as done as you wish. You can baste the steak with the marinade if you wish.

Note: This was the result of testing a number of recipes from the web in hopes of duplicating the Lone Star Cafe's (Hertel Avenue) wondrous fajitas. While it is not as good, it did originate in Texas. Serve with the fresh guacamole. Sauteed onions and peppers are also good with this. Tortillas are entirely optional, and not necessary. Leftovers are very good on a salad.
