Zucchini With Parmesan
2 small zucchini, cut
into rounds 1/4" thick Heat oil, add onions in skillet. Cook for 17 minutes, medium-low heat, until they start to brown. Add zucchini, one layer thick (if you can't make one layer, sautee in batches), 1 tsp. salt and 1/4 tsp pepper. Cook 10-15 minutes, turning zucchini over to brown on the other side. Sprinkle with Parmesan, cook 30 seconds more. Serve immediately. Serves 2 |
