Thai Beef Salad Wraps
(makes 4 wraps)
1/2 lb. flank steak
salt & pepper
(Vegetables)
1 peeled, cubed cucumber
1/3 c. thinly sliced sweet onion
1 c. chopped tomatoes (cherry or regular)
1 Tbs. chopped mint
1 Tbs. chopped basil (Thai basil if possible)
1 Tbs. chopped cilantro
(Dressing)
2 Tbs. brown sugar
3 Tbs. low-sodium soy sauce
2 Tbs. lime juice
1/2 tsp. crushed red pepper
4 10" flour tortillas
Lettuce
Grill steak to desired doneness. Rest it 5 minutes and slice
thinly on the diagonal.
Combine steak with the vegetables; toss with the dressing.
Warm the tortillas, line them with lettuce and spoon on the beef salad mix.
Roll up and enjoy.
