Rosemary Chicken Salad Sandwiches
3 c. chopped roasted skinless, boneless chicken breasts
1/3 c. chopped green onions
1/4 c. chopped smoked almonds
1/4 c. plain fat-free yogurt
1/4 c. light mayonnaise
1 tsp. chopped fresh rosemary
1 tsp. Dijon mustard
1/8 tsp. salt
1/8 tsp. freshly ground pepper
Bread or pita or roll of your choice
Combine all but the last, stirring well. Chill for an hour if possible; the
flavors mingle well.
Spread on bread if you wish. Tastes good all by itself!
