Grilled Turkey Bangkok Salad
Marinade & Turkey Preparation 2 T. honey 2 T. soy sauce 1 clove garlic, minced 1 tsp. fresh ginger root, minced, or equivalent dry 1/8 tsp. sesame oil 1 pound turkey tenderloins Combine marinade. Pierce tenderloins several times. Marinate meat in self closing plastic bag. Grill tenderloins 15 to 20 minutes, turning halfway through grilling. Allow tenderloins to stand 10 minutes and slice into 1/4-inch medallions. |
Dressing 1 garlic clove 1 slice ginger root 1 T. fresh cilantro 1/4 C. rice vinegar or white vinegar 5 T. juice from Mandarin oranges 2 T. peanut butter 4 t. soy sauce 4 t. sesame oil 4 t. hoisin sauce Combine dressing ingredients in food processor. cover and refrigerator until ready to serve. |
Salad 2 small heads lettuce 6 green onions, chopped 1 medium red onion 1 red bell pepper 1/3 lb. fresh pea pods 1 can Mandarin orange slices, drained 1/4 C. unsalted peanuts Combine vegetables, add dressing to taste and top with grilled turkey. |
