Curried Cauliflower Soup
1 1/2 Tbs. oil Heat the oil in a 4-qt pot at medium, add the onion, celery, carrots and sweat for around 3 minutes, without browning. Reduce heat to medium-low and add cauliflower. Sweat 15 minutes, stirring occasionally. Stir in curry powder and salt. Add apples and bananas; sweat 3 minutes. Add broth. Heat it up and then simmer around 35 minutes. Remove from heat. Puree with a stick blender or in batches in a processor. Salt & pepper to taste. Note: adapted from a Wegmans recipe. |
