12 oz fresh cod
½ sweet red pepper, thinly sliced
½ sweet onion, thinly sliced
Extra Virgin olive oil
Salt & pepper
2 ripe tomatoes, thinly sliced
Zest of 1 lemon
2 Tbs. chopped fresh dill
White wine or lemon juice to sprinkle on
Parchment paper or aluminum foil, large enough to fold over the fish and make a packet.
Heat oven to 450 degrees, oven rack in center.
- Saute the red pepper and onion in olive oil for around 7 minutes, until soft.
- Place the fillet on one side of the parchment paper or aluminum foil. Salt & pepper, sprinkle with lemon zest and dill.
- Place the tomato slices on top of the fillet. Then place the cooked peppers and onions on top.
- Before closing the packet, sprinkle a few tablespoons of white wine over the fish, or a tablespoon of fresh lemon juice.
- Close the packet tightly, place on cookie sheet and into the oven for 14-16 minutes.
- Carefully open the packet and serve the fillet topped with the vegetables.
