Zucchini With Parmesan

2 small zucchini, cut into rounds 1/4" thick
1 medium yellow onion, sliced
olive oil
Kosher salt
pepper
1/4 c. fresh grated Parmesan cheese

Heat oil, add onions in skillet. Cook for 17 minutes, medium-low heat, until they start to brown.

Add zucchini, one layer thick (if you can't make one layer, sautee in batches), 1 tsp. salt and 1/4 tsp pepper. Cook 10-15 minutes, turning zucchini over to brown on the other side.

Sprinkle with Parmesan, cook 30 seconds more. Serve immediately.
