Melon Chicken Salad
My revision of Martin Yan's recipe

Cut the following into 2" x 1/4" strips
1.5 c. honeydew
1.5. c. cantelope
3/4c. cucumber (peeled)
1 c. daikon radish

Put the above in a bowl. Add 2 or 3 thinly sliced green onions.

Prepare these in separate bowls for constructing the salad at the table:

1. c shredded cooked chicken
2 Tbs. chopped cilantro
2 Tbs. walnuts, toasted

Stir together this dressing:

2 Tbs. rice vinegar
1 Tbs. soy sauce
1. Tbs. peanut butter
1/2 tsp. sesame oil
2 tsp. honey

Plate the melon mixture. Each guest dresses this mixture, then tops with chicken, cilantro, walnuts.

Note: this is a wonderful summer salad. You can do without elements (honeydew or radish if you can't find it). Just go with what you can find. Roti chicken is especially nice with this, but any will do, including leftover chicken. Try this recipe!
