Curried Cauliflower Soup

1 1/2 Tbs. oil
1 onion, chopped
2 stalks celery, chopped
1 large carrot, chopped
1/2 head cauliflower, broken into small florets
1/2 Tbs. curry powder
1/2 Tbs. salt
2 MacIntosh apples, peeled, cored, diced small
1 banana, peeled, coarsely chopped
4 cups low-sodium chicken broth (or vegetable broth)

Heat the oil in a 4-qt pot at medium, add the onion, celery, carrots and sweat for around 3 minutes, without browning. Reduce heat to medium-low and add cauliflower. Sweat 15 minutes, stirring occasionally.

Stir in curry powder and salt. Add apples and bananas; sweat 3 minutes. Add broth. Heat it up and then simmer around 35 minutes.

Remove from heat. Puree with a stick blender or in batches in a processor. Salt & pepper to taste.
