Cranberry Nut Bread

1 stick butter (1/2 c.) softened
1 egg
1 c. sugar

3/4 c. orange juice
1 Tbs grated orange peel
1 c. chopped fresh cranberries
3/4 c. coarsely chopped nuts
2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. soda
3/4 tsp. salt

Cream butter, egg, and sugar.

Add orange juice and dry ingredients and grated orange peel.

Stir in cranberries and nuts. Do not overmix.

Bake at 350 degrees for 55 -60 minutes. Cool in pan 10 minutes, then remove and cool loaf on wire rack.

Makes 1 regular loaf pan, two half-loaf pans, or 3 mini-loaf pans. Freezes well.
