Cod in Parchment

12 oz fresh cod

½ sweet red pepper, thinly sliced
½ sweet onion, thinly sliced
 
Extra Virgin olive oil
Salt & pepper

2 ripe tomatoes, thinly sliced
Zest of 1 lemon
2 Tbs. chopped fresh dill
White wine or lemon juice to sprinkle on

Parchment paper or aluminum foil, large enough to fold over the fish and make a packet.

Heat oven to 450 degrees, oven rack in center.

  1. Saute the red pepper and onion in olive oil for around 7 minutes, until soft.
  2. Place the fillet on one side of the parchment paper or aluminum foil. Salt & pepper, sprinkle with lemon zest and dill.
  3. Place the tomato slices on top of the fillet. Then place the cooked peppers and onions on top.
  4. Before closing the packet, sprinkle a few tablespoons of white wine over the fish, or a tablespoon of fresh lemon juice.
  5. Close the packet tightly, place on cookie sheet and into the oven for 14-16 minutes.
  6. Carefully open the packet and serve the fillet topped with the vegetables.
