Chicken Salad with Mint and Feta

3 c. chopped skinless, boneless rotisserie chicken breast
1/2 c. chopped yellow bell pepper
1/2 c. chopped red bell pepper
1/2 c. cubed peeled English cucumber
1/2 c. (2 oz.) crumbled feta cheese
1/4 c. chopped fresh mint
1 1/2 Tbs. chopped fresh oregano
2 Tbs. fresh lemon juice
1 1/2 tsp. extra virgin olive oil
1/4 tsp. salt
1/4 tsp. freshly ground pepper

Mint sprigs (optional) for garnish

Combine all ingredients (except the garnish) in a large bowl; toss gently to combine. 6 Servings.

Note: Outstanding flavors! The moist rotisserie chicken is a plus here.
