My Recipe Chicken (or Turkey) Noodle Soup
1 cup (or more) cooked chicken or turkey, chopped
Chop the items below and sweat them (over medium-low
heat) for 5 minutes in a soup pot in a little olive oil:
1 onion
1 carrot
1 stalk celery
2 cloves garlic
Add these and cook for around 1 minute:
1/8 tsp. poultry seasoning
1/8 tsp. dried thyme
1/4 tsp. dried oregano
Then add these:
4 c. chicken or turkey broth
1/4 tsp. salt
the chopped chicken or turkey
- and bring to a boil. Simmer for 10 minutes.
Add a handful (1/2 - 3/4 cup) of uncooked noodles, boil 5 minutes.
Done. Serve. Eat.
Note: I learned a big lesson in the last year about soups. Very few soups (not counting crock pot recipes) can tolerate being cooked for HOURS without losing the flavor of every ingredient that began so fresh and tasty.
